BLUEBERRY PUDDING 
2 c. fresh blueberries
1/2 tsp. cinnamon
3 tbsp. butter
1 c. flour
1/4 tsp. salt
1 c. boiling water
juice of 1/2 lemon
1 1/4 c. granulated sugar
1/2 c. milk
1 tsp. baking powder
1 tbsp. cornstarch

Combine blueberries, lemon juice and cinnamon. Place into an 8-inch square pan. Cream butter and 3/4 cup sugar; add milk. Combine flour, baking powder and salt. Add to creamed mixture; mix well. Spread batter over blueberries. Mix remaining 1/2 cup sugar and cornstarch. Sprinkle over batter. Pour hot water over top.

Bake at 375°F for 1 hour.
