CHOCOLATE CHIP OATMEAL COOKIES 
1 1/4 c. butter, softened
3/4 c. firmly packed brown sugar
1/2 c. granulated sugar
1 egg
1 tsp. vanilla
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt (optional)
3 c. Quaker Oats (quick or old fashioned), uncooked
1 (12 oz.) pkg. semi-sweet chocolate pieces (2 cups)
3/4 c. chopped nuts

Heat oven to 375 degrees. Beat together butter and sugars until light and fluffy. Add egg and vanilla; beat until well blended. Gradually add combined flour, baking soda, and salt, mixing well. Stir in oats, chocolate pieces, and nuts. Drop by rounded teaspoonfuls onto ungreased cookie sheet. Bake 9 to 11 minutes. Cool 1 minute on cookie sheet; remove to wire rack. Store tightly covered. 6 dozen.
