VANILLA COOKIES | |
1 1/3 cups all-purpose flour 1/8 teaspoon salt 2/3 cup butter, cut up 1/3 cup granulated sugar 1 large egg yolk, lightly beaten 1/2 teaspoon vanilla extract Grated zest of 1 lemon 1/3 cup confectioners' sugar Preheat oven to 350°F. Line a cookie sheet with parchment paper. In a large bowl, sift the flour and salt. Use a pastry blender to cut in the butter until the mixture resembles coarse crumbs. Mix in granulated sugar, egg yolk, vanilla, and grated lemon zest to form a smooth dough. Form the dough into 1 1/2 x 1/2 inch logs and place 1 inch apart on cookie sheet, flattening them slightly. Bake for 10-12 minutes, or until just golden. Transfer to wire racks to cool. Dust with confectioner's sugar. Makes 16 cookies. |
