PEPPER JACK STUFFED CHICKEN 
2 boneless chicken breasts
2 oz. Pepper Jack cheese
1 tsp. taco seasoning
1 tbsp. vegetable oil

Flatten chicken to 1/4-inch thickness. Cut cheese into strips. Place cheese down center of chicken. Fold chicken over cheese and secure with toothpicks. Rub with taco seasoning. Heat oil in a skillet. Add chicken and brown on all sides. Put in a greased 8x8-inch dish.

Bake uncovered at 350°F for 25 to 30 minutes, or until juice runs clear.
