EASTHAMPTON BAKED BEANS 
1 (16 oz.) bag Navy beans
1/2 tsp. baking soda
3 med. sliced yellow onions
1 c. molasses
2 tbsp. cider vinegar
3 tsp. dry mustard
1/2 c. brown sugar
2 tsp. salt
1/2 tsp. pepper
1/2 c. ketchup
2 tbsp. Worcestershire sauce

Soak beans overnight in ample water. Drain beans and cook in ample water with the baking soda. Bring to a boil, then simmer for 20 minutes, drain. Mix remaining ingredients (except onions) in 1 cup hot water. Put 1/3 of beans in crock pot; layer on half of the onions, repeat, then layer on remaining 1/3 of beans.

Pour in liquid mixture and add additional water to cover beans. Cook on high setting for 7 to 8 hours. (Or you could bake in 300 degree oven for 4 hours in a covered baking pot.)
