COCONUT OATMEAL CAKE 
1 c. oatmeal
2/3 c. shortening
1 1/4 c. boiling water
2 eggs
1 tsp. vanilla
1 c. brown sugar
1 c. white sugar
1 1/2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt

Mix oatmeal, shortening and water; let stand 5 minutes. Beat eggs and sugars together. Add oatmeal mixture and vanilla. Sift dry ingredients together and add to batter. Pour into greased 9x13-inch baking pan and bake at 350°F for 40-45 minutes.

Topping:

2/3 c. brown sugar
6 tbsp. butter, melted
cream
1 c. coconut flakes
1/2 to 3/4 c. nuts

Mix together and spread on hot cake. Put under the broiler until brown and bubbly.

Serves 16-20.
