OATMEAL COCONUT COFFEE CAKE 
1 c. quick cooking oats
1/2 c. butter, cut into 5 slices
1 1/3 c. boiling water
3/4 c. sugar
3/4 c. brown sugar
2 eggs
3/4 c. whole wheat flour
3/4 c. flour
2 tsp. baking powder
1 tsp. each of baking soda & cinnamon
1/4 tsp. salt
1/2 tsp. nutmeg

Combine quick oats, butter and boiling water. Let stand 20 minutes. Beat together sugar, brown sugar and eggs. In a separate bowl combine whole wheat flour, flour, baking powder, baking soda, cinnamon, salt and nutmeg. Add this dry mixture to egg mixture along with oat mixture. Mix well.

Bake at 350 degrees for 35 minutes in a greased and floured 9"x13" pan. After baking, spread cake with topping and broil until golden.

TOPPING:

1/3 c. melted butter
3/4 c. brown sugar
1/4 c. milk
1 c. coconut
1 c. chopped nuts
