PICKLED STRING BEANS | |
4 lbs. or 4 qts. whole green beans 1/4 tsp. crushed red pepper per pt. jar 1/2 tsp. whole mustard seed per pt. jar 1/2 tsp. dill seed per pt. jar 1 clove garlic per pt. jar 5 c. vinegar 5 c. water 1/2 c. salt Wash beans, then drain and cut to fit jars (standing up). Pack in clean, hot jars. Add pepper, mustard seed, dill and garlic. Combine vinegar, water and salt. Heat to a boil and pour over the beans in the jars, filling to leave a 1/4 inch head space. Seal and process in boiling water for 5 minutes. Makes 7 pints. |
