CAROL'S TWICE BAKED CHEESE CAKE 
PIE FILLING:

2 pkgs. cream cheese, softened
1/2 c. sugar
1 1/2 tsp. vanilla (or to taste)
3 eggs, room temperature

Preheat oven to 350 degrees. In large bowl cut softened cream cheese into small chunks. Add sugar and vanilla; mix until smooth. Add eggs; mix until smooth. Pour mixture into prepared pie crust (recipe below). Bake at 350 degrees for 20 minutes. Let cool for 20 minutes.

TOPPING MIX:

16 oz. sour cream
1/2 c. sugar
1 tsp. vanilla

In small bowl, mix ingredients until smooth. Pour mixture over the top of cooled pie; bake at 450 degrees for 5 minutes. Cool completely (about 35 minutes). Strawberries, blueberries, cherries can be added when pie has cooled completely.
