SOUTHERN BACON SCRAMBLE 
4 slices bacon
2 tbsp. onion, chopped
1 can (14 1/2 oz.) hominy, drained
4 eggs
Salt
Pepper

Fry bacon until crisp. Remove from pan and crumble. Keep 2 tablespoons drippings in skillet. Fry onion until transparent. Add well drained hominy.

Lightly beat together 4 eggs and seasoning. Then pour over hominy mixture stirring to scramble eggs. When scrambled, pour in serving dish and top with crumbled bacon. Serves four.
