SCRAMBLED TOFU WITH RICE 
16 oz. block tofu (soft)
4 c. cooked white rice
1/2 sm. red peppers
3 pods (lg.) garlic
2 stalks celery
1/2 med. onion
4-8 tbsp. vegetable oil
Dash salt
Dash pepper

Saute red peppers, garlic, celery and onions in vegetable oil until they are the consistency you enjoy. Mash tofu with a fork. Add salt and pepper; mash again. Add tofu to vegetables. Stir for 3 minutes. While cooking on medium heat put lid on pan and steam while occasionally, stirring for 5 minutes. Serve on top of rice.
