CUCUMBER DILL SALAD 
1/2 c. cottage cheese
2 tbsp. skim milk
1/2 tsp. dried dill
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. finely chopped dill pickle
1 med. cucumber, thinly sliced
1/2 red onion, thinly sliced and separate into rings

Place cottage cheese and milk in blender. Blend until whipped and creamy. Add dill, salt, pepper and dill pickle and blend until well mixed. Refrigerate until ready to use. Before serving, combine cucumber and onion slices in a bowl. Pour dressing over.
