EASY BREAD
2 1/2 c. milk
1/4 c. sugar or 3 tbsp. honey
1/4 c. shortening
1 tbsp. salt
2 pkgs. yeast
1/2 c. warm water
7 c. flour

In a saucepan, combine milk, sugar, shortening and salt. Heat until bubbles appear at the edges of the milk. Cool to lukewarm. Soften yeast in warm water.

Add about half the flour to the lukewarm milk mixture and mix well. Add yeast, then the remaining flour until the dough is a large elastic feeling ball in the center of the bowl.

Place on floured board and knead about 8 minutes. Place in oiled bowl and allow to rise until about double in bulk.

Punch dough down and form into two loaves. Place in pans, cover and let rise about one hours, or until the loaves look light. Bake in preheated 400 degree oven for 10 minutes. Reduce heat to 350 degrees and bake 30 minutes longer. Remove from pans and cool on racks.
