MEATBALL SOUP 
MEAT BALLS:

2 lbs. ground beef
3 eggs
1/4 lb. raw rice
1 onion, minced
1/2 c. bread crumbs
1/4 tsp. oregano
1/4 tsp. garlic powder
Salt and pepper to taste

SOUP:

2 qt. beef broth
2 c. tomato juice
1 (4 1/2 oz.) diced green chilies

VEGETABLES:

1 green pepper, diced
1 onion, diced
3 ribs celery, diced
3 tomatoes, chopped
2 carrots, diced
Salt and pepper
Dash of Tabasco to taste

Mix meat balls mixture; let set in refrigerator. Form into small balls. Combine soup ingredients in soup pot. Boil soup ingredients. Add meat balls and simmer 45 minutes. Add vegetables and simmer 10 minutes. Adjust seasoning. Serves 8.
