PEPPER AND BEEF ROLLS | |
6 oz. medium noodles 1 1/2 lb. beef round steak, cut 3/4 inch thick 1/2 c. snipped parsley 1 med. sweet red and green pepper 2 tbsp. cooking oil 1 (15 1/2 oz.) jar meatless spaghetti sauce 1 tsp. dried oregano 1/4 tsp. garlic powder 2 tbsp. Parmesan cheese Cook noodles according to directions, drain and set aside. Cut steak into 6 pieces. Pound with meat mallet to 1/4 inch thick, salt and pepper them. Sprinkle each piece of meat with parsley. Place 2 or 3 pepper strips on each piece clockwise. Secure with toothpicks. In large skillet, cook beef rolls until brown. Remove and set aside. Combine spaghetti sauce, oregano and garlic powder. Toss noodles with 1 1/2 cup sauce mixture. Place into 12 x 7 1/2 x 2 inch baking dish. Arrange meat rolls on top. Spoon leftover sauce on meat rolls. Sprinkle with Parmesan cheese. Cover with foil. Bake at 350 degrees for 45 to 50 minutes or until meat is tender. Makes 6 servings. |
