MEDITERREAN POTATO SALAD 
2 (6 oz.) cans black olives, pitted
1/2 c. olive oil
1 tsp. oregano, dried
3 lbs. new potatoes, red or white, cooked
3 fresh peppers, red, green or yellow or a combination
1/2 c. sliced green onions
3 tbsp. chopped fresh parsley
1/2 c. fresh lemon juice
1/2 tsp. salt

Combine all ingredients, cover and allow to marinate in refrigerator for a time before serving. Good at room temperature too. Different. Makes quite a lot. Can 1/2 ingredients.
