BROCCOLI CHEDDAR CORN BREAD 
3 c. coarsely chopped broccoli (about 10 oz.) may use 1 pkg. frozen
1 c. flour
1 c. corn meal
4 tsp. baking powder
4 lg. eggs, beaten lightly
1 c. finely chopped onion
2 c. grated extra sharp Cheddar
1/2 c. butter, cut into bits

Blanch fresh broccoli for 2 minutes. Pat dry. In a bowl whisk together flour, corn meal, baking powder and salt and pepper to taste. Add eggs and whisk. Mix until just combined (batter will be thick). Stir in onion, broccoli and Cheddar.

Heat butter in 9 inch square baking pan in preheated 400 degree oven until hot but not smoking. Spoon batter into pan, spreading evenly and bake in middle of oven for 25 to 30 minutes or until tester comes out clean.
