ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil
3 tsp. vanilla
2 c. packed raw zucchini (grated coarse)
3 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. baking powder
1 tsp. salt
1 c. chopped pecans or walnuts (optional)

Grease and flour 2 loaf pans. Preheat oven to 350 degrees. Beat eggs until light and fluffy. Stir in sugar, oil and vanilla; blend well. Add zucchini; stir well.

Mix remaining ingredients together. Slowly add to zucchini mixture 1/2 cup at a time until completely blended together. If desired add nuts, fold in.

Divide mixture into 2 loaf pans. Bake at 350 degrees for 1 hour or until center springs back when touched. Cool on racks.
