CARROTS WITH ALMONDS 
1 pkg. sliced almonds, toasted
6 carrots
1/2 tsp. salt
2 tbsp. butter
2 tbsp. brown sugar
2 tsp. grated orange rind
2 tbsp. orange juice

Cut carrots lengthwise into halves. Cook in water and salt until just tender; drain. Stir in butter, sugar, orange rind, orange juice, and almonds. Simmer 5 minutes, turning and coating carrots in sauce. Yield: 4 servings.
