POACHED PEARS 
Bartlett Red Pears, peeled
Saucepan filled with water and 1/4 c. sugar
12 oz. Ricotta cheese
2 oranges, peeled and diced
Walnuts, chopped
Sugar to taste
Nutmeg to taste

Bring water to a rapid boil. Add sugar and pears. Cook pears until soft (use toothpick or the point of a sharp thin knife to check). Remove pears and cool under cold running water. When pears have cooled, take a melon baller or a spoon and scoop out the inside of each paper.

Mix Ricotta cheese, walnuts, orange and sugar and fill the inside of the pears. Bring a saucepan of water to a boil and place chocolate in a mixing bowl over the steam to melt. When thoroughly melted, dip filled pears in chocolate and place on a sheet pan and let cool in refrigerator until ready for use.
