POACHED PEARS 
6 Bosc pears
Port wine
White Chablis

Place wine in pan and cook until alcohol is gone. Taste. Peel, core and halve pears.

Immediately place in wine and simmer with juice of 2 oranges, 1 bay leaf, 2 peppercorns, and a little thyme. Test for doneness using tip of knife. Pears should be firm.
