GOLDEN POTATO CASSEROLE | |
7 med. potatoes 1/4 c. butter 2 c. shredded sharp Cheddar cheese 1/3 c. finely chopped onion 2 c. sour cream 1 tsp. pepper 1 tsp. salt 2 tsp. butter Cook potatoes in skins until done. Chill, then peel. Grate in large bowl. Over low heat, melt 1/4 cup butter and 2 cups Cheddar cheese until almost melted. Remove from heat; blend in sour cream, onions, and seasonings. Pour over potatoes and stir in. Put into 9 x 12 inch casserole dish. Dot with butter and bake at 350 degrees for 45 minutes. Cover loosely. Remove last 10 minutes. Serves 8. |
