ZESTY ASPARAGUS 
2 (15 oz.) cans extra-long tender green asparagus spears, drained
1/4 c. vinegar
1/4 c. cooking oil
2 tbsp. chopped onion
1 tbsp. diced pimento
1/2 tsp. salt
1/4 tsp. sugar
1/8 tsp. pepper

Gently place asparagus spears in shallow container. Thoroughly combine remaining ingredients and pour over asparagus. Cover and chill 6 hours or overnight; check occasionally to see that all asparagus is covered with the marinade. Drain before serving.

TIP: The longer the asparagus is in the marinade, the zestier the flavor will be.
