PECAN DELIGHT PIE (No Crust) 
3 egg whites
1 c. sugar
1 tsp. vanilla
3/4-1 c. pecans
1/2 tsp. baking powder
20 Ritz crackers, finely crushed
Whipping cream

Beat egg whites and vanilla until peaks form. Add sugar mixed with baking powder to the egg whites. Beat until very stiff. Fold in crushed Ritz crackers and chopped pecans. Put in buttered glass pie pan. Bake at 350 degrees about 30 minutes. Chill and serve with whipping cream.
