FINNON HADDIE 
1 lb. smoked fish fillets
1 tbsp. butter
1 tbsp. all purpose flour
Dash of salt and pepper
1/2 c. milk

Cut fish in serving pieces, put in baking dish. In saucepan, melt butter; blend in flour, dash of salt and pepper. Add milk; cook and stir until thick and bubbly. Bake at 350 degrees for 35 minutes. Makes 3 or 4 servings.
