COMMUNION SUPPER SALAD 
1 very large head cabbage
3 cucumbers, skinned and sliced
2 carrots, sliced, chopped or shredded
2 green peppers, sliced into short strips
1 big red onion, sliced into rings
1 1/2 c. white vinegar
2/3 c. water
3/4 c. oil
1/4 c. salt (I use Kosher salt)
1 c. sugar

For marinade, combine vinegar, water, oil, salt and sugar. Put all remaining ingredients into a heavy crock and cover with marinade. I double the marinade to cover the salad well. Marinade at least 24 hours, 3 days is better. This makes a lot of salad, but it keeps on getting better.
