HONEY BALLS 
3 c. flour
1 tbsp. sugar
1/2 tsp. salt
4 eggs
1/4 c. butter
Oil for deep frying

ONEY SYRUP:

3/4 c. honey
1/3 c. sugar
1/3 c. water
1 tbsp. lemon juice
Colored sprinkles

Sift flour, sugar and salt into a large bowl. Make a well and add eggs and butter. Stir with a fork to mix flour mixture gradually into eggs. When dough is stiff enough to handle, turn out onto floured board and knead until smooth (5 minute).

Cover, refrigerate 1 hour. Divide dough into 10 pieces. Roll each piece to about 18 inches long. Cut each roll into 36 pieces.

Pour oil into fryer to 3 inches. Heat to 375 degrees. Drop enough pieces into oil to cover surface. Stir to separate. Cook until golden brown, about 2 or 3 minutes. Drain on paper towels.

Make honey syrup. Add balls to syrup, stir until syrup is absorbed and balls stick together. Pile onto a serving platter. Sprinkle with colored sprinkles.

Honey Syrup: Combine honey, sugar, water and lemon juice in saucepan. Bring to a boil, stir constantly until sugar dissolves. Continue cooking, uncovered, without stirring about 15 minutes, or until thick.
