CHICKEN CORDON BLEU 
4 whole chicken breasts, boned, split
8 (1 oz.) slices ham
8 (1 oz.) slices Swiss cheese
1/4 tsp. pepper
1 egg
1/2 c. Italian bread crumbs
1/4 c. butter
1 can cream of mushroom soup
1/2 soup can milk
1/3 c. dry sherry

Place each breast between wax paper and pound until 1/4 inch thick. Place 1 slice each of ham and cheese on chicken, roll up and secure. Dip into beaten egg and then bread crumbs. Secure with toothpicks. Melt butter in heavy skillet. Brown each roll. Remove chicken and put into baking dish; reserve drippings in skillet. Add remaining ingredients to drippings, and stir well. Pour sauce over chicken and bake, uncovered for 40 to 45 minutes at 350 degrees. 8 servings.
