BAKED CHICKEN WITH ORANGE-NUT
RICE
 
1 c. water
1/2 c. orange juice
1/3 c. minced onion
1/4 c. butter, cut into pieces
Crumbs to coat chicken
1 1/2 c. Minute rice
2 1/2 lbs. frying chicken pieces
2 tbsp. chopped pecans
1 tsp. salt

Combine water, juice, onion, butter, pecans and salt in 2-quart shallow baking dish. Add rice, mix well. Coat chicken, arrange over rice. Bake at 400 degrees for 45 to 50 minutes.
