VANILLA MUFFINS 
1 c. sugar
2 lg. eggs
2 c. flour
1/2 tbsp. baking powder
1 c. milk
1/2 stick butter, melted
1/2 tbsp. vanilla

Beat sugar and eggs until creamy. Sift together the flour and baking powder. Add flour and milk alternately to creamed mixture. Add butter and vanilla. Beat until well combined. Fill cups 2/3 full in paper flutes or thoroughly greased tins. Bake at 375 degrees for 20 to 25 minutes until golden.
