SALMON PATTIES 
1 (No. 303) can pink salmon
1 c. minute oats
2 eggs
1/4 c. chopped onions
1 tsp. pepper
1 tsp. salt

Mix all ingredients until well blended. Shape into 1" thick patties (should make about 5 nice patties). Fry in skillet with enough hot oil to cover the bottom of the skillet, about 1/2" deep and hot enough to make salmon patties cook in about 8 minutes on each side. Spoon lemon sauce that follows over top of the salmon when ready to serve. Garnish with chopped parsley or chopped egg for color.

LEMON SAUCE:

1 tbsp. butter
2 tbsp. lemon juice
1 c. milk
2 tbsp. cornstarch

Combine in saucepan and cook over medium heat until slightly thickened.
