CHIVE CUCUMBERS 
2 c. cucumbers, washed & very thinly sliced
1 tbsp. minced fresh chives
1/2 sm. bunch fresh parsley
1 1/2 tbsp. fresh squeezed lemon juice
1 1/2 tsp. rice wine vinegar
2 1/2 - 3 tbsp. vegetable oil
Salt & pepper
Pinch of sugar

Combine all ingredients in bowl and let stand at room temperature until ready to serve.
