BAKED CAULIFLOWER 
1 head cauliflower, broken into flowerets
1 1/2 c. drained, canned tomatoes
1/2 c. chopped onion
1/2 tsp. dried oregano
1/2 tsp. salt
1/8 tsp. pepper
3/4 c. shredded cheese
3/4 c. coarse cracker crumbs

Cook cauliflower 20 minutes until just tender. In greased 2-quart casserole, combine tomatoes, onion, oregano, salt and pepper. Cover with cauliflower. Mix cheese and crumbs, sprinkle over cauliflower. Bake in hot 400 degree oven for 20 minutes. Makes 6-7 servings.
