CALCUTTA RICE 
1 c. rice
3 c. water
1/2 a green pepper, diced
2 blades celery, chopped
1/2 of a sm. onion, diced
1 c. tomatoes
1 tsp. salt
1 to 2 c. grated cheese
Pepper, onion and cheese in amounts to taste

Cook rice, pepper, celery and onion in water until water disappears. Stir in tomatoes, salt and grated cheese. Pour into buttered baking dish and bake at 350 degrees for 30 minutes. Note: Canned tomatoes can be used. Drain and use liquid as part of 3 cups water. Then measure 1 cup tomatoes.
