PAP'S GOOD STEW 
3-4 lb. beef, round bottom roast
1 lg. onion
2 tbsp. shortening
1 can (8 oz.) tomato sauce
1 tsp. salt
1/4 tsp. pepper
6 med. potatoes
Water
1 can (16 oz.) green beans (optional)
1 can (16 oz.) corn (optional)

Cut meat into 1 inch cubes. Melt shortening and brown meat and onions in a skillet. Salt and pepper to taste while cooking and taste often. Once meat is brown, pour tomato sauce over meat and onions and stir and simmer for 2 minutes.

Cut potatoes into cubes and place in a pressure cooker. Pour meat and sauce over the potatoes and add enough water to almost cover. Pressure cook for 6-8 minutes. Check to make sure potatoes are done.

PAP's Good Stew is ready to eat, but if a few more show up for supper, just add green beans and corn and extra water and simmer. Pap calls this variation: "Soup". Serve soup with plenty of crackers.
