OATMEAL BREAD | |
3 c. "quick" oatmeal 1 tsp. salt 3 tbsp. oil 3 tbsp. brown sugar (or 1/4 c. if you feel lazy) 3 tbsp. molasses (Brer Rabbit or Grandma's) Mix above then pour 2 cups boiling water over all - stir fast! Dissolve in: Cool oatmeal mixture and test (with finger). When "warmer than luke" add: Mix and add the dissolved yeast. Mix well. Then add: 1 c.) (Before all flour is added, 2 whole eggs or 2 egg whites may be added - not necessary but eggs give a better texture.) Pour 1/2 cup of reserved flour on board - dump the dough there - it's a sticky mess! Sprinkle with flour and knead - about 100 whacks! Oil a large mixing bowl. Place dough in bowl and set in warm place. Oil top of dough. Let rise until doubled, 1 to 1 1/2 hours. Punch dough down, divide into three parts - form loaves and place in well greased (not oil - Crisco is best) pans. Let loaves rise until double (about 1 hour.) Bake at 350 degrees for about 30 minutes (ovens vary - loaves should be well browned). Turn hot loaves onto cooling racks and cover with a clean dish towel. When cool, put loaves in plastic bags and seal. This bread freezes well. This bread may take 4 hours of attention, but it's worth your time. |
