SQUASH CASSEROLE 
3 lb. yellow squash, sliced
1/2 to 1 chopped onion
1 c. butter
2 eggs, beaten
1 can cream of mushroom soup
Dash of salt and pepper
Ritz cracker crumbs

Cook squash and onion together until tender; drain well. Add butter and mix thoroughly. Fold in remaining ingredients except cracker crumbs. Place in a buttered casserole and top with cracker crumbs. Bake for 30 minutes in a 350 degree oven.
