SQUASH CASSEROLE 
3 lbs. squash
Salt and pepper
1 egg
1 pkg. Ritz crackers
1 chopped onion
3 tbsp. sour cream
Parmesan cheese

Slice and cook squash until tender. Drain thoroughly, then salt and pepper to taste. Add egg. Crush crackers and add enough to absorb any remaining liquid. Add chopped onion and stir in sour cream. Put into casserole and sprinkle with parmesan cheese. Bake at 350 degrees for about 20 minutes, or until done.
