BOLOGNA-VEGETABLE MEDLEY 
1 (12 oz.) pkg. thick-sliced bologna
1 (16 oz.) pkg. frozen broccoli, green beans, pearl onions and red peppers
1 tbsp. butter
3/4 c. shredded Monterey Jack cheese

Place vegetables in 11 3/4 x 7 1/2 inch microwave-safe baking dish. Cover with waxed paper and microwave at high 8 minutes, stirring after 5 minutes. Pour off liquid. Stir in butter.

Meanwhile, cut stack of bologna into 6 wedges. Separate and gently stir bologna into vegetables; sprinkle cheese on top. Microwave, uncovered, at high 4 minutes, rotating dish 1/4 turn after 2 minutes. 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
