CHICKEN CACCIATORE | |
1 sm. onion, chopped 1/4 c. water 1 c. canned tomatoes 1/2 c. tomato puree or sauce 1/2 tsp. garlic powder 1 tsp. oregano 1/8 tsp. pepper 4 chicken pieces Boil onion in water until tender in a covered 1 quart saucepan. Do not drain. Add tomatoes, tomato puree or sauce, garlic powder, oregano, and pepper to onions. Simmer 10 minutes to blend flavors. Place chicken in frying pan. Pour tomato mixture over chicken. Cook, uncovered, over low heat until chicken is tender, about 45 minutes. Uncover and cook 15 more minutes to thicken tomato sauce. Makes 4 servings, one piece of chicken each. |
