PARKER HOUSE ROLLS 
6 to 6 1/2 c. flour
1/2 c. butter, softened
2 tsp. salt
1/2 c. sugar
1 egg
2 pkgs. dry yeast

Mix 2 1/2 cups flour, sugar, salt, yeast, egg, and butter with electric mixer. Gradually pour 2 cups hot tap water and 1 1/2 cups flour in and beat 2 minutes. Add remaining flour. Pour out onto floured surface and knead about 10 minutes. Turn into greased bowl and let rise 1 1/2 hours (in warm place). Pour back on floured surface and knead.

Cover with bowl and let rest 15 minutes. Roll dough 1/2 inch thick. Cut like biscuits, dip in butter and fold over, or make rolls like usual, or in loaves. Cover and let rise in warm place 30-40 minutes. Bake at 400 degrees for 18-20 minutes. Makes 3 1/2 dozen rolls.
