SWEET POTATO PECAN PIE 
2 c. cooked, mashed sweet potatoes
1/2 c. granulated sugar
1/2 c. brown sugar
1/4 tsp. salt
1/8 tsp. ginger
1/4 tsp. cinnamon
1/4 tsp. maple flavoring
4 eggs, lightly beaten
1 c. chopped pecans
1 unbaked 9 inch pie shell

Preheat oven to 375°F. In large mixing bowl, thoroughly combine potatoes, sugars, salt, spices and flavoring. Add eggs and beat vigorously until combined. Stir in pecans. Pour into pie shell and bake for 45 minutes. Reduce heat to 325°F and bake for an additional 10 minutes.
