HOT COLE SLAW 
1 cucumber, peeled & sliced
1 med. cabbage, finely shredded
1 sm. onion, grated
1 green pepper, chopped
3 tbsp. chopped parsley
1 1/2 c. chili sauce
1 1/4 c. cream
Juice of 1 lemon
1 tbsp. minced chives
Salt & pepper to taste

Soak the cucumber in salted ice water for 1/2 hour, drain and pat dry. Add the cucumber to the pepper, parsley, onion and cabbage. Mix well. Blend the chili sauce with the cream, lemon juice and chives. Season to taste. Pour dressing over vegetables just before serving, toss thoroughly. Serve.
