QUICK-N-EASY PUMPKIN PIE | |
2/3 c. cold milk 1 (4 serving) pkg. vanilla instant pudding 1 c. solid canned pumpkin 1/4 tsp. cinnamon 1/4 tsp. nutmeg 1/4 tsp. ginger 1/4 c. chopped pecans (opt.) 1 baked 8" shell or graham cracker shell 1 3/4 c. whipped topping On low speed beat together milk, pudding mix for 30 seconds. Blend in pumpkin, spices, nuts and 1 cup whipped topping. Spoon into pie shell. Chill 2 hours. Garnish with remaining whipped topping. NOTE: Recipe can be doubled by using 1 (16 oz.) can pumpkin and a 9" pie shell. |
