QUICK PUMPKIN PIE 
4 eggs
1/2 c. butter
2 c. milk or light cream
1/2 c. flour
1 c. sugar
2 c. pumpkin
1 c. coconut (opt.)
2 tsp. vanilla
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1/4 tsp. ginger

Mix all ingredients in a blender or by hand. Pour into 2 greased and floured 9 inch pie plates. Bake at 350 degrees for 50 to 55 minutes or until center is set.
