EGGPLANT SUPREME 
1 med. eggplant
4 eggs, lightly beaten
1 1/2 c. cracker crumbs
1 1/2 c. grated cheese
1 1/2 c. milk
1 tsp. salt
1/2 tsp. pepper
1 stick butter, melted

Peel and slice the eggplant. Place in saucepan with 1 cup water. Cook until tender and drain. Add remaining ingredients except 1/2 cup cheese and a small amount of melted butter. Mix well and pour into baking dish. Sprinkle reserved crumbs, cheese and butter. Bake in 350 degree oven for 25 to 30 minutes or until set.
