SNAPPY TOMATOES 
2 eggs
1 c. crackers, crushed
1 c. sharp cheddar cheese, cubed
1/4 tsp. salt
1/2 tsp. pepper
1 lg. can (2 1/2 c.) stewed tomatoes
1 sm. onion, diced
2 tbsp. soft butter

Beat 2 eggs in buttered baking dish. Add 1/4 teaspoon salt and 1/2 teaspoon pepper. Add 2 1/2 cups stewed tomatoes. Crush 1 cup crackers. Add cubed cheese, diced onion and 2 tablespoons soft butter. Bake at 350 degrees for 40 to 45 minutes.
