HONEY CORNMEAL MUFFINS 
1-1/4 cups all-purpose flour
3/4 cup cornmeal
1 tbsp. baking powder
1/2 tsp. salt
1 tbsp. grated lemon peel
1/2 cup skim or 2% milk
1/2 cup honey
1/4 cup oil
1 egg or 1/4 cup egg product

Heat oven to 375°F. Grease bottoms only of muffin tin. In large bowl, combine flour, cornmeal, baking powder, salt and lemon peel. Mix well. Add milk, honey, oil and egg; stir just until dry ingredients are moistened. Fill prepared muffin cups 2/3 full.

Bake for 13-18 min. or until very light brown and toothpick inserted in center comes out clean. Immediately remove from pan. Best served warm.

Makes 1 dozen.
