BLUE CORNMEAL JALAPENO MUFFINS 
1 c. blue cornmeal
3/4 c. all-purpose flour
3 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. ground cumin
2 beaten eggs
3/4 c. milk
1/4 c. cooking oil or bacon drippings
1/4 c. chopped jalapeno chile peppers
Cream cheese (optional)

In a medium mixing bowl stir together cornmeal, flour, baking powder, salt and cumin and set aside. In a small mixing bowl stir together eggs, milk, oil and jalapeno peppers. Add egg mixture all at once to cornmeal mixture stirring just until moistened. Grease muffin cups or line with paper baking cups and fill 3/4 full. Bake in a 400 degree oven about 15 minutes or until a wooden toothpick inserted in the center comes out clean. Remove from the pan; serve warm with cream cheese Makes 12.
