SIMPLEST CARAMEL CORN 
1 c. corn kernels
1 stick butter
1 c. brown sugar
1/4 c. light Karo syrup
1/2 tsp. salt
1 tsp. baking soda
1 brown paper bag
Nuts (optional)

Pop kernels in air popper, place cooked kernels in brown paper bag (grocery store type).

In pan, melt butter, brown sugar, light Karo syrup, and salt. Boil this mixture for 2 minutes, stirring so as not to stick, add baking soda and stir constantly, this mixture will grow rapidly. Pour over popcorn in brown bag; stir lightly with wooden spoon. Roll the top of the bag and shake well.

Now place bag in microwave for 1 minute, shaking every 30 seconds. You may cook longer if you feel it necessary, but not longer than 2 minutes as corn will be extremely tough.

When cooling, take out of bag and place on a plastic surface (i.e., plastic table cloth or wax paper). Spread out so will not all stick together. May add nuts. Any remaining caramel corn will keep in a sealed dish.

Since microwave ovens vary in power, you may need to adjust your cooking time.
